About Nathalie Calderon
Founder of The Unseen Table
For more than 22 years, my life has revolved around one thing: creating unforgettable experiences through food.
Long before Michelin-starred kitchens, luxury hotels, and private dining experiences, it all began with a little eight-year-old girl who sold her very first plate of food for just $2.
That moment changed everything.
It wasn’t about the money. It was about the feeling of watching someone smile because of something I had created with my own hands. That single moment sparked a passion that has guided every decision I’ve made since.
By twelve years old, I was preparing meals for my family on my own. By sixteen, I was working in professional hotel kitchens while attending culinary classes in high school. My dream was clear: attend culinary school and build a life doing what I loved.
Life, however, had other plans.

The recession of 2009 forced me to leave culinary school before graduating. For more than a year I searched for work in an industry that had almost stopped hiring. There were moments when I questioned everything. Yet somehow, my passion for cooking never disappeared.Eventually, Disneyland gave me an opportunity that would shape my future.Starting as a prep cook, I quickly earned the role of Kitchen Lead Supervisor and became part of the reopening of Carnation Café and the opening team of Jolly Holiday Bakery Café, serving thousands of guests every day. It was there I learned that excellence isn’t an accident—it’s built through discipline, teamwork, and relentless consistency.
Although my time there ended unexpectedly, it became one of the greatest blessings of my career.
Because without that chapter ending, I would never have found my way to The Ritz-Carlton.
The Story Continues
Working within Forbes Five-Star luxury hospitality forever changed my understanding of service. I had the privilege of cooking for presidents, royalty, celebrities, distinguished guests, and international events while working alongside remarkable chefs who pushed creativity beyond anything I had imagined. More importantly, I learned that luxury isn’t about extravagance.
It’s about making people feel seen.
After more than five years within Marriott’s luxury properties, I carried those lessons into the world of private dining, traveling throughout the United States as a private chef and continuing to refine my craft one guest at a time. But deep inside, one vision never stopped growing. I dreamed of creating an experience where food, art, music, emotion, and storytelling could exist together—where dinner became something people would remember for the rest of their lives.
That dream became The Unseen Table.
The Unseen Table is not simply an event.
It is the culmination of twenty-two years of passion, sacrifice, resilience, and an unwavering belief that extraordinary hospitality has the power to move people.
Every course tells a story.Every detail has a purpose.Every guest becomes part of something larger than themselves. To everyone who has supported me throughout this incredible journey—my family, mentors, friends, colleagues, and guests—thank you for believing in a dream long before it had a name.
Now, it is my greatest honor to finally share that dream with the world.
Welcome to The Unseen Table.
