Founder of The Unseen Table
My name is Nathalie Calderon, Founder and Executive Chef of The Unseen Table.
As a first-generation American born to Hispanic parents, my passion for food began long before I stepped into a professional kitchen. Some of my earliest memories are of cooking alongside my mother, learning that food was never just about what was on the plate—it was about family, culture, connection, and bringing people together.
By the age of eight, I was selling my first plate of food. By sixteen, I was working in professional kitchens. What started as a childhood passion became a lifelong career that has now spanned more than two decades. Along the way, I worked in restaurants, hotels, private events, and eventually as a private chef, serving families and individuals from all walks of life.
For many years, my work took place behind the scenes. As a private chef, I had the privilege of serving extraordinary people and witnessing firsthand the impact that hospitality can have on creating meaningful experiences. During that time, I met someone who became much more than a client. He became a mentor.
While I brought my knowledge of food to the table, he encouraged me to think beyond the kitchen. Through countless conversations, he introduced me to new ways of thinking about business, economics, leadership, and long-term vision. He challenged me to see opportunities where I once saw limitations and helped me understand that success is not simply about working harder—it’s about building something that can outlive you.
The Story Continues
When he passed away, my world changed in ways I could never have anticipated. The chapter of my life that had defined so much of my professional journey came to an end, and I found myself standing at a crossroads. I could continue down a familiar path, or I could take everything I had learned over the years and create something of my own.
I chose to build.
The Unseen Table was born from that decision.
What began as an idea has evolved into a vision for a luxury experiential hospitality company that brings together culinary arts, storytelling, visual arts, live performance, and human connection. My goal is not simply to serve a meal. My goal is to create experiences that inspire conversation, celebrate creativity, and remind people of the power of gathering around a shared table.
The name The Unseen Table holds special meaning for me. Throughout my career, I have met countless individuals whose contributions often go unnoticed—the cooks, servers, artists, creators, mentors, and visionaries who help shape our lives from behind the scenes. This project is, in many ways, a tribute to them.
Today, I am building The Unseen Table with the same passion that inspired me to sell my first plate of food as a child, but with a much larger purpose. I want to create experiences that bring people together, challenge expectations, and demonstrate that hospitality can be a powerful force for connection, storytelling, and transformation.
Food has given me a career, a voice, and a purpose. The Unseen Table is my way of sharing that purpose with the world.
